Music and Foodparing: Sundried tomato and basil spaghettini

Want a quick and easy dinner for you and the kids? This one is easy and hey, all kids love Pasta :)

Ready for an at home, Italian Dinner? Try this recipe and I will recommend the music.

This easy pasta dish can be made quickly. - Music - Giovanni Battista Pergolesi - Violin Concerto in B flat Major - Beautiful!

You’ll be dining with you and the kids. As for picking your wine (for you, not the kids, Ha!) you want to look more at the sauce than the pasta itself. If you want to spice up the dish, add red pepper flakes and a nice Sangiovese. No spice for your pasta, try a Merlot or Italian Chianti. As for the kids, when I was young we had Kool-Aid but juice or milk works too!


Spaghettini with Sun-Dried Tomatoes


1 Tablespoon Olive Oil

2 Garlic cloves, crushed

1 Medium brown onion, chopped

1 16 oz Can of diced tomatoes

1/2 Cup sun-dried tomatoes, thinly sliced.

1 Teaspoon caster sugar

1/2 Cup finely chopped fresh basil leaves

16 oz box of Spaghettini

Shaved parmesan to serve

Italian Parsley - a few sprigs

Salt

Pepper


Step 1


Heat oil in a large saucepan on medium high heat. Add garlic and onions. Sauté onions and garlic for about 5 minutes stirring occasionally or until onions soften. Add sun-dried tomatoes. Sauté a bit more 1 to 2 minutes or until fragrant.


Step 2


Add diced tomatoes and sugar bring to a boil and reduce heat to medium. Simmer for about 10 minutes and add basil.


Meanwhile, cook pasta (follow directions on package). When pasta is finished cooking, drain and mix with sauce and top with parmesan, salt and pepper and Italian parsley.


There are few things better than a fresh, home made sauce and pasta. Treat yourself well. You will never regret it!
